Winter Family Pictures

I'm excited to share these pictures! We were happy with how they turned out. On the way to meeting we enjoyed the beautiful snow and frost on the trees and I wish we had the camera. So after meeting we came home, put the sweet potato casserole in the oven, and left with our camera and tripod to find a place to take some pictures. A little ways behind our subdivision there is a more rural area with new construction and we took these near a new home going up (we didn't have to walk through much snow or trespass too terribly!) It didn't feel too cold either. Some of you will see this come in the mail, but until then...

Sweet Potato Casserole

Today we tried a new recipe for this sweet potato casserole. I rarely cook sweet potatoes but I have a little boy who constantly asks for squash. He may also mean sweet potatoes, he will eat both. He always says he wants to go to "the peanut place" (Texas Roadhouse) so he can have "squash" which is of course the loaded sweet potato!
This recipe is from Better Homes & Gardens November 2006.
Pineapple & Blue Cheese Sweet Potato Casserole 4lbs sweet potatoes, peeled & cut in quarters 1 cup packed brown sugar 1/2 cup butter, cut up 1/4 cup milk 4 eggs, lightly beaten 3-4 Tbsp. lemon juice pineapple chunks blue cheese crumbles 1. Cook potatoes covered in enough boiling salted water to cover for 25-30 mins. or until tender. Drain and return to pan. 2. Preheat oven to 350F. Slightly mash potatoes with a potato masher. Stir in sugar, butter, milk, eggs, lemon juice. Stir until well combined. Transfer sweet potato mixture to a greased 3 qt rectangular baking dish. Top with pineapple chunks and blue cheese crumbles. 3. Bake uncovered for 30-35 minutes or until heated through. Makes 8-12 servings.
I made at least a 1/2 recipe of potatoes, maybe less, (not sure how many lbs I had), so just estimated ingredients and tried to go lighter on some. It was pretty good for sweet potatoes! Brett was really too tired to eat it so maybe another day we'll get his opinion.

Tonight Christina & Jennifer are here. After dinner Christina read a book about germs (for some reason he really likes this book) to Brett so he had to draw a picture of a germ. I was surprised it was so detailed! We had a nice supper, visit & relaxing night.

Night with Mom & Dad

Hanging out with Mom & Dad is so much fun! Wow, the excitement!
When Damon comes home from work somedays he will brave the chaos in the LR and sit here so Brett will climb up and perch on his shoulders. I'm surprised Damon doesn't mind but doesn't seem to.
I can't believe I've posted this picture but I can laugh at myself! Brett wanted a story before bed so I read him "Bear Wants More" while my face dried. He kept touching & looking at it, not sure what to think! Oh-I really like my Turbie Twist hair towel (I got it from S's mom as a gift)! I think I'll have to get another one or two so I can use them everyday.

Giant Ice Cube

Brett dug this big piece of ice out of the wagon yesterday & said "Mom look at this giant ice cube!" That's what it looks like! I love this picture-I don't think he could get any cuter!! (But I'm the Mom..) : )
The kids love playing with ice but yesterday one tripped over a chunk under the sled and got a few cuts. Thankfully the one on her chin didn't need stitches but it looked icky. It actually didn't bleed, just enough to blot. I hope I never have to send a child off to get stitches!

December 25th

Today was so nice. It started with waking up after 7am for a change! I got up and put our breakfast, baked french toast, in the oven and went back to bed. It was so quiet, warm and the house smelled like cinnamon-perfect! At 12:30pm D & L and kids came for dinner. I made a lasagne, salad and breadsticks. For dessert we had the Chocolate Peppermint Stick Marshmallow Fantasy Cake. It is a beautiful cake and fitting for today's holiday. Everyone liked it but I don't know that I liked it so much I'd make it again. It was easy to make but took some time. I couldn't find the Andes peppermint baking chips so I used peppermint extract instead - maybe this made the difference. The kids had a great time playing. Us big kids played Phase 10. I think we determined Damon was the winner, it was close! We had a nice day & now Brett is getting ready to go to bed early. Me too! Damon has to be to work at 6am since his boss if off yet. My first child comes at 6:45am, next at 7am, 2 more at 7:30, 2 are off, etc... Glad it's a short week! Look's like another winter storm headed our way. I wondered why they were posting an alert for Thurs/Friday, but oh yeah, tomorrow's Wednesday already!

Wreath

Michael's had a good sale the other night - 70% of their wreaths. I always like one on the front door for each season since I have people coming & going there all day/every day. So I got this $30 wreath for $9! I like it much better than my last one & it's nice to have a change.

It's been busy

I'm glad it's done & we have a long weekend!
Obviously we don't do Christmas but these families I care for do...and I suppose I wouldn't have to do anything extra but it's fun to do all the craft stuff with the kids to give to their parents so we had some projects to finish up before Friday. And they nearly all give me gifts so I like to send a little something home with them in appreciation. So I made strawberry jam and fudge for them (and cranberry orange bread for Damon's coworkers, 2 pans of homemade brownies for his work potluck) and framed pictures of their child. I realized part way through that the framed pictures and ornament projects the kids made would have been plenty along with all the crafts that have been going home but that's me....I tend to over do a lot of things. It didn't seem like a big deal at first but it ends up being quite a project for 10 families. I did enjoy it but wow, I'm glad it's not something we do normally. Next year I'll try the K.I.S. method. They were all so appreciative though and I work with wonderful people. I've really grown attached to this group of kids too. The kids got a Scholastic book and treat bags with candy, raisins, pencils, Kleenex pack. I sent it all home so it didn't get dumped out and consumed here! LOL
I got a good response on the framed pictures. Some requested the picture emailed or on disc so they could print & use for gifts too so I was glad they liked them so much. I was pleased with how they turned out too. The parents are so kind to me and gave me many nice gifts including cash and a spa certificate which I can't wait to use!
We're off until Wednesday. Tomorrow we have an all day special meeting. Otherwise we have no plans. Oh, there's things we'd like to get done, but we'll see if that happens! LOL Damon's going to do some car repairs for sure. Hope everyone has a great little break!

Gingerbread House

Here's the finished gingerbread house. Kira helped me start in on Saturday & I finished it this morning. Brett was too distracted at G & G's to help so it ended up being more for my entertainment! It needs a snowman in the front yard yet but I need to get marshmellows. I like the pinwheel garden in the backyard. Mom had those around the house so we had to use them. The kids think they would like to eat it but so far no one has even touched it!

Weekend

We had a fun weekend! Friday night we were just home. Saturday after doing some errands we went up to Mom & Dad H's for the afternoon. Mom made a *great* dinner. Julie & I got some nice (early) birthday presents! During the afternoon we visited & I worked on the gingerbread house. Kira helped too but Brett was too distracted with other things to help out so it ended up being my project. It was fun though! I finished it up this morning so I'll add pictures. Saturday night we drove home down Hwy 26 to Watertown to pick up Damon's car. One of the "day care dads" changed the tires, etc for us so we had to pick it up. The roads were messy, lots of snow and slow going but we made it home OK. I don't really care to drive on two lane roads in that kind of weather especially!

Sunday dinner was ready when we got home from meeting - chicken casserole and squash. Damon did dishes and I actually took a nap! Damon got me a warming blanket for my birthday (it's tomorrow) and it really relaxes me! Normally I lay down wanting to nap and as soon as I doze off, I'm suddenly awake and can't sleep. I've been enjoying it! Then we went went to D & L's and we took the kids sledding at the school hill. We were out about an hour and had a great time. Brett did so well and loved every minute of it. Derek & Brett played so nice afterwards too. L made soup and salad supper for us. We had peppermint stick ice cream, cookies and fudge for dessert and then visited for a while.

Brett's sure he's got a little roll after eating lunch but I'm not convinced!!
And here's the exercise I caught him doing last week. He was supposed to be cleaning up his trains. He moved the green tunnel thing down to his back & up again!

Ooo, I want to make this!

I found this on: Yumsugar.com Looks like something I would like: cake, pink, marshmellow! It looks a little over the top but what's wrong with that?! Pretty involved recipe making the cake from scratch. Not hard, just time consuming. Maybe I'll attempt this for Christmas Day. We're probably going to do something with D & L so maybe I'll make this for dessert. Julie, it says this recipe is adapted from that Cupcake Galore book I got you for your birthday.
Chocolate Peppermint Stick Marshmallow Fantasy Cake
White Cake Batter Chocolate Cake Batter Marshmallow Frosting Mini Candy Canes(for decoration) Crushed Candy Canes(for decoration) Classic White Cake 12 tablespoons (1 1/2 sticks) unsalted butter, softened 1 1/2 cups sugar 2 cups all purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 6 large egg whites (3/4 cup) 3/4 cup milk 2 teaspoons vanilla extract 1 1/2 cups Andes Peppermint Crunch Baking Chips pink food coloring Set rack at the middle level in the oven and preheat to 350 degrees. Butter the bottom of two 9-inch round. Line bottom with parchment or waxed paper. In a large bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scape the bowl and beater often. Fold in Andes Peppermint Crunch Baking Chips. Take 2/3 of the batter out and place into a separate bowl and set aside. Add 3 drops of pink food coloring to the remaining 1/3. Blend until the batter is pink in color. Chocolate Cake 1 3/4 cups all purpose flour 2 cups sugar 3/4 cup unsweetened cocoa 1 1/2 teaspoon baking soda 1 1/2 teaspoons baking powder 1 teaspoon salt 2 eggs 1 cup milk 1/2 cup vegetable oil 1 teaspoon vanilla 1 cup boiling water In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Mix together with a wooden spoon then set aside. In small bowl combine eggs, milk, oil and vanilla. Beat well with hand mixer(or place in a stand mixer). Slowly add boiling water and mix. Add wet ingredients to flour mixture and fold and stir until smooth. To make the the cake: Set out both prepared cake pans. In the first pan scoop 2 cups of chocolate batter into the pan, spread out with spatula. Next scoop 1 ½ cups white batter with peppermint chips into the center of the chocolate batter. Spread out to form a circle. Lastly scoop 1 cup of the remaining pink into the center of the pink batter. For the second pan. Scoop 2 cups white batter with peppermint chips into pan, spread out with a spatula. Scoop 1 ½ cups of the chocolate batter into the center of the white batter, spread out with spatula to form a circle. Scoop 1 cup of the remaining pink batter into the center of the chocolate batter. You will most likely have leftover batter…if so make cupcakes. Bake for 30-35 minutes, OR until the center comes out clean. Remove from oven and let cool in pan for 15 minutes. Flip cake over onto a rack and remove parchment or waxed paper. Let cake cool completely before frosting.
Marshmallow Frosting: 4 egg whites 1 ½ cups sugar ½ cup light corn syrup pinch of salt 2 tsp vanilla 1 tsp peppermint extract 6 drops pink food coloring
Using a large bowl, preferably the top of a double boiler, mix eggs, sugar, corn syrup ans salt until combined. Place the bowl over simmering water ans whisk until the sugar dissolves and the mixture is hot, about 3 minutes(be careful to not make it too hot since you are using eggs and don’t want them to scramble). Remove heat and beat 5-7 minutes until frosting is cool and stiff peaks form. Beat in vanilla and peppermint extract. Add food coloring and beat until all the color is incorporated.
To assemble the cake: Place one cake layer on cake plate. Take one cup of frosting and spread it out evenly onto the layer. Place the second layer on top of the frosted layer. Use remainder of frosting to frost top and sides of cake. Decorate top of cake with crushed candy canes. Decorate side of cake with mini candy canes.

Let's just say....

I was not feeling like Miss Mary Poppins tonight! I'm sick of it all sometimes. Stuff everywhere in my house, working night & day, mess all the time, always sorting, cleaning, doing stuff for other people like creating experiences and providing keepsakes for their kids. Dcg#1: Today she fell & hit her eye against the kitchen play set. She's OK but it doesn't look good. Dcm says "oh, Dcd's not going to like that". Well maybe he can stay home with his two kids then and make sure they don't get bumped up. Dcm knows this is what happens with kids, but he's not around enough to be realistic about it all. Dcg#2: won't eat lunch other than garlic bread & milk. Asks for more bread before she's eaten the bread on her plate. (She's almost 5 yrs) Ok, then, you choose to be hungry today. Go play. Snack time: "what about milk?" Well we're having water today with our banana and vanilla wafers (two food components as required by the food program & that's what we're having). Yep, I planned this accordingly. I knew she would be hungry so I made sure she had something she liked. See I was nice. But no, you're not going to fill up on milk or juice. And no 2nds on snack if you refuse to eat lunch or even try it. Choosing to be hungry is not fun huh? Dcd comes to pick up. Dcm had dropped off. They are no longer together so Dcb goes to Dad's for 2 days then to Mom's for 2 days. Dcd glances at invoice and "oh, guess she didn't pay you". Uh, no. Whoever picks up on the last day of care pays. I don't worry about who it is or how you've got it worked out. I ask him "do you need to talk to her about it?" "Oh no. Wait.....I do have...mumble, mumble... " Runs outside and comes back with cash. Hmm, I think if I had over $100 in cash I would remember. I think Dcd didn't want to pay this week and yes, maybe it was Mom's week but now we changed schedules so today's the last day of care & you picked up. Whatever, you guys work it out! I know some days the stress of everything going on affects Brett. He acts out. I do not ignore it, I'm on him all the time it seems like. There's no doubt I'm harder on him then the rest. But you know, if none of the other kids were here, he'd be fine. That's not a good measure of how "good" he is of course, and sure he's pretty good when he's got Mom & Dad to himself, the whole house, etc. Then I think "go easy on him, this isn't easy for any of us". I think he's a great kid overall and will turn out OK in the end! He cried tonight because all the kids went home and he had no one to play with. He always asks "why did all the kids go home?" Uh...cause they don't *live* here!! Really we had a great week, but wow, was I ever glad it was Friday tonight! (All this resulted in rearrangement of the LR and elimination of many, many toys! Less is more, right??) This could be a whole 'nother rant someday (you might see it) but we heard last night that another family, past clients of mine, are separating. The guy is best friends with one of my current families, who are also separating. (Same time. Coincidence?) Both guys make big bucks, have beautiful huge homes, lovely hard working wives and beautiful kids. What's wrong with them?? Selfishness it seems. Dcm even said they have too much money, too many toys and don't know how to be happy. Unbelievable. And what I see are these sweet little kids.

What Brett hopes to do tomorrow

We're going up to G & G H's and he hopes Kira and Grandma, and whoever else would like, will help build a gingerbread house. I remember the one we made at home way back when - and we were not very happy when our cousin ate part of the snowman!!! LOL That must have been verrry stale!

What we did today

We worked on a snow fort! The snow is perfect for it- a little hard on top & breaks into chunks. The kids got right into it after I showed them what to do and we made it this far. It's hard to see in the sun. I did use a shovel to break the snow up. A lot easier than just using your hands like we used to do at school during recess. Julie, remember the leaf forts we used to make too? With fire places & all. They were just leaves piled in a line for walls, etc. I almost liked those better than snow forts I think. I remember the time of year, how the leaves smelled and getting the sticks. And picking the milkweed in the field next to the school. Amity was a great school with those big old trees out in the country! Anyway, here's a picture of the wall we made today. I actually enjoyed being outside with the kids today!

Brett's Reindeer in the Snow

Mid Week

I can't believe tomorrow is Thursday already. This week is going fast but we got so much done already. Feels good to accomplish stuff! Monday I had a quiet day & got things in order around the house after being gone all weekend to MN. Mon. night I did a bunch of errands with Brett along. We had fun!
Tuesday was a snow day - meaning I had one school age kid all day but three others off. Damon & I shoveled a lot of snow & ice. We mostly had ice so had to keep up with it so it didn't get so thick. We both have sore arms! Yesterday afternoon while the kids took *long* naps I started supper, made fudge (it was time for another pan!) and 4 mini loaves of banana bread. Baked some more squash too. Cleaned up all that & started my final project for my class. I finished at 11pm last night. I'm done with classes for a month! It looks like my next one will require a few (6? Less I hope!) trips to Green Bay to meet in person.
Damon did a few more errands and fixed a leaking toilet. Today I had the kids do several painting projects - one big mess! Tomorrow is just another mess of another kind! Actually tomorrow is our cooking activity - cookie decorating so- it will be a big mess.... I will post a picture of Brett's adorable reindeer he did today.
The kids really enjoyed playing in the snow after lunch. I thought they would be disappointed that turned hard and icy but instead they found big chunks to dig out & break. Brett thumped a few against the neighbor's house (he's got quite an arm, it's not super close, but he was aiming for the roof) so we had to go over and apologize with a plate of fudge tonight! The neighbor was fine, but it was good for Brett to do (and I wanted to make *sure* the neighbor was fine) Brett was scared silly and should be for not listening but I didn't want him to be afraid of our new neighbor man. Another lesson learned. Brett really is a good kid but necessary experiences.
Yay, tomorrow's Thursday! I always like Thursdays. I think it's because we made it through most of the week, got a lot done, and we can look forward to Friday (pay day, relaxing Friday night, weekend plans.) Plus it's a little quieter day for my schedule normally.

Really good change

Damon called from work and said he had good news. I thought maybe he got a bonus? Nope, our insurance is changing again, back to Blue Cross Blue Shield. We are thrilled! I think it's more expensive but less than $10 week more. The best part is we can now go back to our Drs. in Janesville at Mercy! Two years ago our insurance changed and we had to choose different Drs. in a town 20 minutes from here which is really frustrating because 1. the clinic & hospital we used to go to are just a few minutes from home 2. the Drs. we had before were waaay better 3. the clinic & hospital in town are nicer. We had some unbelieveble experiences at the other clinic and felt we had less quality of care. Now that Brett is older we don't need to go to the Dr. so much but even for those times we need to go, this is so much better!! I'm actually looking forward to making an appointment with my old Dr.!

4 M&Ms

Tonight Brett holds out his hand & asks me "Mom how many are in my hand?" Not sure why he's asking because he would know. I go along with it- "well it looks like there's two red and two green...." He said "yep, and two and two pluses four!" (that's what I was hoping he'd figure out, although he knows there's a total of four.) What a little smartie!
